Successful restaurants across the country are avoiding putting on too many airs, but they do bring a bit of distinction to their tables, whether it’s reindeer sausage at Fat Ptarmigan in Anchorage, Alaska; a diner-style cheeseburger made with local beef at The Fat Lamb in Louisville, Ky.; or refined barbecue at Smoky Rose in Dallas.
