American Lamb Pizza

American Lamb Pizza

Yield: 4 servings.

8 oz. prepared pizza dough

¼ cup Italian tomatoes, strained

1 cup Feta cheese, crumbled

¼ cup black olives, sliced

¼ red onion, julienned

10 white anchovy fillets

2 American Lamb tenderloins

1 Tbsp. extra virgin olive oil

to taste, fresh cracked black pepper

Roll out pizza dough into a 12" circle. Spread strained tomatoes evenly on top of dough, leaving a ¼" border around edge of dough. Cover sauce with cheese, olives, onion and anchovies. Slice lamb tenderloins on slight bias into ¼" slices; place slices evenly around the pizza. Lightly drizzle pizza with oil and season with pepper.

Place pizza into preheated 400°F pizza oven and bake until lightly golden brown, approximately 8 minutes. Pizza can also be baked in a regular oven on a pizza stone. Remove pizza and allow to cool slightly before cutting. Cut into 8 pieces and serve immediately.
