Collaborating on their first project, Tony Marchese of Trio restaurant in Palm Springs, Calif., and Andrew and Juliana Copley, owners of Copley’s on Palm Canyon, also in Palm Springs, have opened AC3 Restaurant + Bar next to Hotel Paseo in Palm Desert, Calif. Designed to bring an international flair to New American cuisine, the menu features memorable dishes such as jumbo lump crab cakes with wasabi guacamole, sweet and sour sauce, and tobiko; Berkshire pork schnitzel with dijonaise crushed potatoes, bacon brussels sprouts, herbed yogurt, and cranberry; and a lobster hash with poached eggs, potatoes, Tinker Bell peppers, melted chèvre and herb salad. All play well with the desert-inspired — and refreshing — cocktail menu created by general manager and beverage director Chris Chmielak that leans toward citrus, herbs and produce.
