Nina Compton, owner of Compère Lapin in New Orleans, opened her second restaurant, Bywater American Bistro, on March 15, inside the Rice Mill Lofts building in the Big Easy. Compton and her husband, Larry Miller, have teamed up with longtime friend, collaborator and Compère Lapin sous chef Levi Raines for the venture. Inspired by past and present cultures that influence Louisiana cuisine, the menu will feature approachable dishes that highlight seasonal ingredients. Standouts include hogs head boudin with dijon and frisée, and pickled shrimp with celery, avocado, rye croutons and trout roe, served atop buttermilk dressing. Housemade pastas, one of Compton’s specialties, include spaghetti pomodoro and smoked ricotta agnolotti with sunchokes.
