The chain’s signature orange will remain central to the design, but with lighter touches designed to reflect the light and clean elements of the menu. The redesign was led by Chicago design firm DesignScout and Oak Park, Ill.-based architecture firm Aria Group Architects.

CEO Jeff Drake told Restaurant Hospitality that the digital menu boards in the redesigned stores “led to better enhancements on messaging,” allowing the brand to better tell its story to customers.

A mobile ordering app was introduced in June 2017 and, according to Drake, has added 1,000 unique users a month. The app is integrated with the point of sale system, but Drake said the mobile ordering won’t replace staff.

Riced cauliflower is now being offered as an alternative to quinoa in all dishes. Hemp hearts, nutritional yeast, and chia seeds are blended into the cauliflower mix to boost nutrition and flavor. The riced cauliflower provides a low-carb option to accommodate various diets, a hallmark of the Protein Bar & Kitchen brand.
