Pumpkin-Scented Couscous

INGREDIENTS:4 cups chicken or vegetable stock
2 cups dry couscous
1 ½ cups diced, blanched pumpkin
½ cup coconut milk
4 tsps. fresh cilantro, chopped
2 oz. jalapeño peppers, chopped
1 red pepper, diced
½ red onion, diced
2 cloves garlic, minced
