Quinoa & Wheat Berries With Bitter Greens

INGREDIENTS:4 cups water, divided
1 cup quinoa
½ cup wheat berries*
1 ½ Tbsps. grated Parmesan cheese
2 tsps. fresh lemon juice
1 tsp lemon zest
1/8 tsp. fresh ground black pepper
3 tsps. olive oil, divided
1 cup green onions, sliced
1 ½ cups mixed greens (arugula,mustard greens, mesclun mix etc.)
