½ cup extra virgin olive oil, divided
4 cups brown rice
4 bay leaves
8 cups water
6 tsp. salt, or to taste
2 cups diced dried plums
2 cups diced Swiss chard stems
6 Tbsp. chopped fresh parsley
6 Tbsp. finely grated lemon zest
1½ Tbsp. ground cumin
1½ tsp. cinnamon
72 large leaves, Swiss chard
