Saigon Cinnamon-Banana Waffles

3 cups all-purpose flour
4 tsp. baking powder
2 tsp. ground Saigon cinnamon
1½ tsp. ground ginger
½ tsp. salt
4 eggs
2⁄3 cup packed brown sugar
1½ cups fresh frozen banana slices, thawed and pureed
2 medium bananas, sliced
1¼ cups milk
¼ cup molasses
¼ cup butter or margarine, melted
as needed, vegetable oil
as desired, maple syrup

Preheat waffle iron. Combine flour, baking powder, cinnamon, ginger and salt in large bowl. Beat eggs and brown sugar in a medium bowl until light and fluffy. Add pureed bananas, milk, molasses and butter to egg mixture; beat well. Add to dry ingredients. Stir just until moistened.

Lightly brush waffle iron with vegetable oil. Pour about ¾ cup batter into waffle iron; cover and cook about 5 minutes or until golden brown. Repeat with remaining batter. Serve with sliced bananas and syrup.
