Funnel Cakes

3 eggs
¼ cup sugar
2 cups milk
1 cup Glenn flour (hard red spring wheat flour)
2-2/3 cups all purpose flour
½ tsp. salt
2 tsp. baking powder
as needed, powdered sugar
as needed, kumquat jam (or desired fruit)
as needed, whipped cream
as needed, Nutella

Heat large pan of oil to 376°F. Sift flour, salt, and baking powder together.

Whisk eggs with sugar and milk. Combine dry ingredients and wet ingredients; stir until well-blended. Place batter in a pastry bag and swirl batter into the hot oil. The batter will puff up, and when it is golden brown, pull it out of the oil. Dust with powdered sugar, top with housemade kumquat jam (or any other fruit you prefer) and add whipped cream.

Serve with a side of Nutella.
