½ cup virgin olive oil
2½ cups diced onions
2½ cups diced celery
2½  cups diced green bell peppers
¼ cup chopped garlic
1 tsp. fresh chopped thyme
1 tsp. fresh chopped rosemary
½ tsp. crushed red pepper
1 bay leaf
3 cups marinara sauce
1½  cups red wine
½ gallon fish stock
1 tsp. kosher salt
1 tsp. ground black pepper
