Both bars are served by the ice laboratory, though the ice created there is very specific to both bar programs. The lab is essentially a giant flash freezer where artisan ice is hand crafted and displayed.
“We want to focus on the ice and how it contributes to the cocktail,” said Robuck. Generally, people talk about ice impacting a drink with its shape or rate of dilusion.
At Rose & Thorn, it’s also about how ice adds to the flavor. “The drink you start with is not the drink you end with,” she said.
