Nitro cold brew coffee is now a widespread accoutrement not only at third-wave coffee houses but at such large chains as Starbucks and Caribou Coffee. But now new variations are in play, including nitro tea, on offer at S&D Coffee & Tea, which provides a smoother mouthfeel and smaller bubbles than carbonation would — although nothing approaching the creaminess — similar to that of stout beer — that comes with nitrogenated coffee. La Colombe has taken a different approach with its nitro cold brew latte. For that drink, available in kegs or cans, milk and coffee are infused with nitrous oxide, instead of pure nitrogen. The nitrous oxide binds with the dairy and brings added creaminess to the drink.
