Lovage Butter

From: Chef CJ Jacobson, Girasol Restaurant, Los Angeles.

1 lb. good quality butter (80% or higher)
1 cup crème fraiche
1 cup chopped lovage

Soften the butter. Whisk in crème fraiche and lovage.
