What makes it special: Outlier, the restaurant in downtown Seattle’s Hotel Monaco, was preceded by a New Orleans-concept called Sazerac in the same space. Outlier has a globally inspired menu, said Applin, so in a nod to his predecessor, he created a Japanese variation of the classic New Orleans blackened fish sandwich with the togarashi blend in place of the more traditional Cajun seasoning.
