Best Sandwiches in America 2017: Seafood

This year’s Best Sandwiches prove that chefs around the country continue to push the boundaries of the hand-held favorite. See all the winners >>

Winner: Togarashi-Crusted Salmon

Restaurant: Outlier, Seattle

Units: 1

Creator: Chef Shawn Applin

Price: $16

Food cost: $4.16

Ingredients: Togarashi, salmon, miso aioli, shiitake mushroom relish and pea shoots on a potato roll

What makes it special: Outlier, the restaurant in downtown Seattle’s Hotel Monaco, was preceded by a New Orleans-concept called Sazerac in the same space. Outlier has a globally inspired menu, said Applin, so in a nod to his predecessor, he created a Japanese variation of the classic New Orleans blackened fish sandwich with the togarashi blend in place of the more traditional Cajun seasoning.
